Tip: These golden-brown cakes are packed with nutrients and protein. Serve with a side salad.

  1. Cut 3 sweet potatoes into spears.
  2. Bake for 45 minutes at 375 F.
  3. Cook 1 cup quinoa.
  4. Add baked potatoes.
  5. Add cooked quinoa.
  6. Add 2 eggs.
  7. Add 3 cloves minced garlic.
  8. Add 6 ounces Gruyere or Parmesan cheese.
  9. Add 2 tablespoons fresh parsley.
  10. Add 1 teaspoon salt.
  11. Add 1/4 teaspoon ground black pepper.
  12. Add 1/4 teaspoon nutmeg.
  13. Mix until combined.
  14. Form quinoa mixture into 1/4-cup patties.
  15. Add 1 tablespoon olive oil.
  16. Cook until cakes are golden brown.
  17. Bake for 5 minutes at 375 F.
